Ingredients
- 4 large boneless skinless chicken thighs
- salt and red pepper flakes
- 4 ounces cream cheese softened
- 1/2 cup frozen spinach defrosted drained and squeezed dry
- 2 cups garlic minced
- 1/3 cup canned artichoke hearts drained and chopped
- 1 cup mozzarella cheese divided
- 4 strips precooked bacon cut in half
- 2 tablespoons olive oil
- fresh parsley chopped
How To Make spinach artichoke dip bacon stuffed chicken thighs

Step 1Preheat oven 400 degrees. Line a baking sheet with foil.

Step 2Cut 5 slits in each chicken thigh not all the way through. Place on baking pan and season with salt and red pepper flakes to taste.

Step 3Mix the cream cheese, spinach, garlic artichokes and 1/2 cup mozzarella together.

Step 4Fill 3 slits on each chicken thigh with the dip alternating with a bacon slice in between. Top with remaining Mozzarella cheese and drizzle with olive oil

Step 5Bake for 30 minutes. Garnish with parsley
