Spicy Tomato Chicken

chicken, cooked and cubed
7 oz
vermicelli, uncooked
2 large
bell pepper, chopped
2 lb
onion, chopped
celery ribs, chopped
1 c
mushrooms, sliced
1/2 c
2 can(s)
spicy tomatoes with jalapenos
2 Tbsp
worcestershire sauce
1 pkg
cheddar cheese, grated


1Cook and season chicken. Save 1-1/2 quarts broth.
2Cook spaghetti in broth; drain, but do not rinse.
3In dutch oven or heavy pan; saute pepper, onion, celery and mushrooms in butter. Add tomatoes.
4Simmer for about 15 minutes to let the flavors blend.
5Add spaghetti, chicken and cheese.
6Let simmer for another 15 or 20 minutes until cheese melts and everything is bubbly.
7Note: Flavors blend better if this is prepared a day ahead of time and refrigerated.
