Ingredients
- 4 - bonless, skinless chicken breasts sliced butterfly style
- 8 ounces feta cheese
- 1 teaspoon oregano, dried
- 12-16 - kalamata (greek) olives, pitted
- 1 teaspoon olive oil
- 2-4 tablespoons mayonaise
- 2-3 cups crushed captain crunch cereal
- 1-2 cup panko bread crumbs
- SPICY MAYO FOR DIPPING
- 2 tablespoons mayonaise
- 1 teaspoon sararcha
- 1/2 teaspoon mirin or rice wine vinegar
- 1 teaspoon lemon zest, very fine (use a micro plain if possible)
How To Make spicy sweet stuffed chicken breasts

Step 1preheat oven to 375

Step 2in a small bowl mix oregano, feta and olives. place 1/4th olive/feta mixture in each chicken breast close over and use a toothpick to hold shut while cooking

Step 3mix the panko and the captain crunch together in a shallow dish or pie plate, brush each breast completely with mayonaise and roll into panko/cereal mixture.

Step 4bake for 35-45 minutes or until chicken is thoroughly cooked (i like to cook on a wire rack so the bottom is crispy too.

Step 6Spicy Mayo; combine 1t chili sauce, 2T mayonaise, 1/2 tsp Mirin or rice wine vinegar and 1t lemon zest and store in refrigerator until ready to use.
