3 oz
onion, sliced
12 oz
chicken breasts, boneless and skinless
1 tsp
cumin, ground
1/2 tsp
cinnamon, ground
1.5 tsp
canola oil
plum tomatoes
jalapeno peppers
1 Tbsp
lemon juice
2 Tbsp
peanut butter
1/2 tsp
garlic clove, minced
1/2 c
tomato puree

How to Make Spicy Peanut Chicken


  • 1Slice onion.
  • 2Wash and dry chicken breasts and rub with cumin and cinnamon on both sides.
  • 3Heat oil in large skillet and saute onion and chicken in hot oil, browning chicken on both sides.
  • 4Wash plum tomatoes and cut into large chunks.
  • 5Halve jalapeno and remove seeds; reserve half for another use.
  • 6Cut jalapeno into 2 or 3 pieces.
  • 7Turn on food processor and add pepper through feed tube.
  • 8Open processor and add plum tomatoes, lemon juice, peanut butter, garlic and puree.
  • 9Process to blend well.
  • 10When chicken is browned on both sides, pour the sauce over.
  • 11Cover, reduce heat and simmer about 5-7 minutes, until chicken is cooked.
  • 12Prepare cilantro leaves.
  • 13Spoon some of sauce over rice and garnish with cilantro.
