Ingredients
- 3 ounces onion, sliced
- 12 ounces chicken breasts, boneless and skinless
- 1 teaspoon cumin, ground
- 1/2 teaspoon cinnamon, ground
- 1.5 teaspoons canola oil
- 2 - plum tomatoes
- 1/2 - jalapeno peppers
- 1 tablespoon lemon juice
- 2 tablespoons peanut butter
- 1/2 teaspoon garlic clove, minced
- 1/2 cup tomato puree
- - cilantro
How To Make spicy peanut chicken

Step 1Slice onion.

Step 2Wash and dry chicken breasts and rub with cumin and cinnamon on both sides.

Step 3Heat oil in large skillet and saute onion and chicken in hot oil, browning chicken on both sides.

Step 4Wash plum tomatoes and cut into large chunks.

Step 5Halve jalapeno and remove seeds; reserve half for another use.

Step 6Cut jalapeno into 2 or 3 pieces.

Step 7Turn on food processor and add pepper through feed tube.

Step 8Open processor and add plum tomatoes, lemon juice, peanut butter, garlic and puree.

Step 9Process to blend well.

Step 10When chicken is browned on both sides, pour the sauce over.

Step 11Cover, reduce heat and simmer about 5-7 minutes, until chicken is cooked.

Step 12Prepare cilantro leaves.

Step 13Spoon some of sauce over rice and garnish with cilantro.
