spicy pecan and smoked chicken quesadilla
Had something like this at a chop house in clearwater fl.I changed some of the ingredients. I do that alot,so if you do like something in my recipe change it. Just injoy what you eat life is to short.

Ingredients
- 2 - 12 in. whole wheat tortillas
- 2 cups fresh spinach leaves
- 1/3 cup caramelized red onions
- 10 ounces smoked chicken diced small
- 1/2 cup shitake mushrooms sliced and sauted
- 1/3 cup spicy pecan peaces
- 1/2 cup cheddar cheese, shredded
How To Make spicy pecan and smoked chicken quesadilla

Step 1Sauted spinach and set aside.Slice mushrooms and saute them and set aside. dice smoked chicken and set aside.

Step 2Caramelize red onion with a little brown sugar,balsamic vinagar. Drain and set aside.

Step 3Next take the pecans and mix with 1t sugar,1t blackened seasoning,and 1t honey and saute until heated well. then set asid to cool.

Step 4Then take half the ingredients and place it on half the tortilla and fold it in half. Cook on the grill or in a large saute pan on med heat until hot.cut each into 4 peaces. and enjoy.
