Ingredients

  • 1 pound chicken breasts, boneless and skinless
  • 6-8 tablespoons apple juice, divided
  • 2 tablespoons mustard seed
  • 1 teaspoon coriander, ground
  • 1/2 teaspoon cinnamon, ground
  • 1 teaspoon clove, ground
  • 1/2 teaspoon red pepper flakes, crushed
  • 2 tablespoons paprika
  • 1/2 teaspoon fresh ground pepper
  • 1/2 cup orange juice, (fresh, frozen or from a jug)
  • 1/4 cup nonfat chicken broth (i used white wine)

How To Make spicy overnight chicken

  • Step 1
    spray a shallow baking dish with cooking spray. arrange chicken breasts in baking dish and brush with 2-4 tablespoons apple juice to moisten.
  • Step 2
    combine remaining ingredients in a blender or food processor, until well incorporated. pour over chicken.
  • Step 3
    cover and refrigerate for 24 hours. bring chicken to room temperature.
  • Step 4
    preheat oven to 325 and bake chicken for 20-25 minutes, or until juices run clear. remove from oven and pour marinade into a separate bowl.
  • Step 5
    preheat broiler on high heat. broil chicken 5-6 minutes per side, basting several times with marinade.
  • Step 6
    NOTES: the next time i am going to do it in the crock pot and see if it will work on the method. we thought it was a little dry in the oven.
