Spicy Overnight Chicken

Ingredients

1 lbchicken breasts, boneless and skinless

6-8 Tbspapple juice, divided

2 Tbspmustard seed

1 tspcoriander, ground

1/2 tspcinnamon, ground

1 tspclove, ground

1/2 tspred pepper flakes, crushed

2 Tbsppaprika
-
1/2 tspfresh ground pepper
-
1/2 corange juice, (fresh, frozen or from a jug)

1/4 cnonfat chicken broth (i used white wine)
How to Make Spicy Overnight Chicken
- spray a shallow baking dish with cooking spray. arrange chicken breasts in baking dish and brush with 2-4 tablespoons apple juice to moisten.
- combine remaining ingredients in a blender or food processor, until well incorporated. pour over chicken.
- cover and refrigerate for 24 hours. bring chicken to room temperature.
- preheat oven to 325 and bake chicken for 20-25 minutes, or until juices run clear. remove from oven and pour marinade into a separate bowl.
- preheat broiler on high heat. broil chicken 5-6 minutes per side, basting several times with marinade.
- NOTES: the next time i am going to do it in the crock pot and see if it will work on the method. we thought it was a little dry in the oven.
