Spicy Overnight Chicken

1 lb
chicken breasts, boneless and skinless
6-8 Tbsp
apple juice, divided
2 Tbsp
mustard seed
1 tsp
coriander, ground
1/2 tsp
cinnamon, ground
1 tsp
clove, ground
1/2 tsp
red pepper flakes, crushed
2 Tbsp
1/2 tsp
fresh ground pepper
1/2 c
orange juice, (fresh, frozen or from a jug)
1/4 c
nonfat chicken broth (i used white wine)


1spray a shallow baking dish with cooking spray. arrange chicken breasts in baking dish and brush with 2-4 tablespoons apple juice to moisten.
2combine remaining ingredients in a blender or food processor, until well incorporated. pour over chicken.
3cover and refrigerate for 24 hours. bring chicken to room temperature.
4preheat oven to 325 and bake chicken for 20-25 minutes, or until juices run clear. remove from oven and pour marinade into a separate bowl.
5preheat broiler on high heat. broil chicken 5-6 minutes per side, basting several times with marinade.
6NOTES: the next time i am going to do it in the crock pot and see if it will work on the method. we thought it was a little dry in the oven.
