  • 1 pound boneless skinless chicken thighs cut into chunks
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1/4 cup lemon grass white and pale green parts only minced
  • 1/4 cup minced shallots
  • 3 thai chilies
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 scallion sliced for garnish

How To Make spicy lemongrass chicken

  • Step 1
    Place all ingredients except scallions in a crock pot. cook on high for 3 hours. Remove the Thai chilies if desired. Serve over rice and garnish with scallions
