Ingredients For spicy chicken enchiladas

  • 1 sm
    onion, chopped
  • 1 md
    garlic, minched
  • 1 Tbsp
    cooking oil
  • 1 lb
    boneless, skinless, chicken breast, cooked & shredded
  • 1 1/2 c
    taco bell salsa, divided
  • 4 oz
    philly chream cheese, ( any cream cheese will do)
  • 1 Tbsp
    cilantro
  • 1 tsp
    ground cumin
  • 1 c
    jack & shredded cheddar cheese, divided
  • 8
    taco bell flour tortillas

How To Make spicy chicken enchiladas

    Preheat oven 350. Cook & stir onion & garlic in hot oil, in large skillet, on medium heat, for 2 minutes. Add chicken, 1/4 cup of salsa, cream cheese, cilantro, cumin. Mix well. Cook until heated through, stirring occasionally. Add 1/2 cup shredded cheese's, mix well. Spoon about 1/3 cup of chicken mixture onto each tortilla, roll up, Place seam down in 12x8 baking dish, top with remaining 1 1/4 cups salsa. & remaining 1/3 cup shredded cheese.bake for about 20 minutes or until cheese is melted.
