Spicy Buttermilk Cornflake Chicken

This is a delicious way to prepare oven crispy chicken. Just the right amount of heat, and the buttermilk adds even more flavor..this was for dinner tonight, at my son's request..

  • 6 c
    coarse crumb cornflakes, you can crush the crumbs smaller, to your preference..

    skinless, boneless chicken breasts
  • 1/2 c
  • 1/2 c
  • 1 c
  • 2 tsp
    cayenne pepper
  • 1/2 tsp
    black pepper
  • 1/2 tsp
  • 1 tsp
    garlic powder
  • 3-4 Tbsp
    butter, melted

How to Make Spicy Buttermilk Cornflake Chicken


  1. Preheat oven to 350 degrees

    Crush the cornflakes to desired coarseness. I like mine about medium in size. Place in a pan, and set aside.
  2. In a medium sized bowl, add the egg and milks, beat slightly .Add the flour and spices, mix till smooth, I use a whisk.
  3. Dip the chicken in the batter, then into the crumbs, make sure you coat well. Place chicken in a shallow baking dish, coated with cooking spray. I use my pyrex 9x13 dish.
  4. Drizzle each breast with butter, bake about 1 hour or until chicken is tender, no longer pink and juices run clear. DO NOT TURN OR COVER PAN WHILE BAKING.

    I also sprinkled garlic powder on it as soon as I took it from the oven.
  5. Enjoy!
