This is a delicious way to prepare oven crispy chicken. Just the right amount of heat, and the buttermilk adds even more flavor..this was for dinner tonight, at my son's request..

Ingredients For spicy buttermilk cornflake chicken

6 ccoarse crumb cornflakes, you can crush the crumbs smaller, to your preference..

1egg

6skinless, boneless chicken breasts

1/2 cmilk
-
1/2 cbuttermilk

1 cflour
-
2 tspcayenne pepper
-
1/2 tspblack pepper
-
1/2 tspsalt
-
1 tspgarlic powder
-
3-4 Tbspbutter, melted
How To Make spicy buttermilk cornflake chicken

1Preheat oven to 350 degrees Crush the cornflakes to desired coarseness. I like mine about medium in size. Place in a pan, and set aside.

2In a medium sized bowl, add the egg and milks, beat slightly .Add the flour and spices, mix till smooth, I use a whisk.

3Dip the chicken in the batter, then into the crumbs, make sure you coat well. Place chicken in a shallow baking dish, coated with cooking spray. I use my pyrex 9x13 dish.

4Drizzle each breast with butter, bake about 1 hour or until chicken is tender, no longer pink and juices run clear. DO NOT TURN OR COVER PAN WHILE BAKING. I also sprinkled garlic powder on it as soon as I took it from the oven.
