spicy buttermilk cornflake chicken

This is a delicious way to prepare oven crispy chicken. Just the right amount of heat, and the buttermilk adds even more flavor..this was for dinner tonight, at my son's request..

Ingredients

  • 6 cups coarse crumb cornflakes, you can crush the crumbs smaller, to your preference..
  • 1 - egg
  • 6 - skinless, boneless chicken breasts
  • 1/2 cup milk
  • 1/2 cup buttermilk
  • 1 cup flour
  • 2 teaspoons cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 3-4 tablespoons butter, melted

How To Make spicy buttermilk cornflake chicken

  • Step 1
    Preheat oven to 350 degrees Crush the cornflakes to desired coarseness. I like mine about medium in size. Place in a pan, and set aside.
  • Step 2
    In a medium sized bowl, add the egg and milks, beat slightly .Add the flour and spices, mix till smooth, I use a whisk.
  • Step 3
    Dip the chicken in the batter, then into the crumbs, make sure you coat well. Place chicken in a shallow baking dish, coated with cooking spray. I use my pyrex 9x13 dish.
  • Step 4
    Drizzle each breast with butter, bake about 1 hour or until chicken is tender, no longer pink and juices run clear. DO NOT TURN OR COVER PAN WHILE BAKING. I also sprinkled garlic powder on it as soon as I took it from the oven.
