Made this up one night while staring into the fridge. Assembled this dish and it was a great hit. This can be messy to make, but very tasty!

Ingredients

  • 3-4
    chicken breast halves, skinless and boneless
  • 6-8 slice
    peppered bacon
  • 3-4 Tbsp
    spicy brown mustard
  • 1-2 dash(es)
    garlic powder
  • 1-2 tsp
    kosher salt
  • ·
    extra virgin olive oil

How to Make Spicy Bacon Hugged Chicken Breasts

Step-by-Step

  1. Spread spicy brown mustard generously all over chicken breasts. Sprinkle garlic powder and kosher salt to taste.
  2. Wrap each chicken breast with one to two slices of bacon and secure with toothpicks.
  3. Sear the chicken in a pain coated with olive oil at medium high heat on each side until bacon is browned and crisp. (About 4-5 minutes on each side, watch carefully)
  4. Add a little bit of olive oil to bottom of an oven safe dish(or use nonstick spray) and place chicken in dish and bake at 375 degrees until juices run clear. About 20-25 minutes. Serve over rice or with vegetables of your choice.
