spiced apple maple bacon chicken

Ahhh..Fall in New England.Always makes me think of apples and spices and maple syrup. I put some of my favorite spices together with chicken, the sweetness of brown sugar, and made this heavenly satisfying fall day supper.Easy too!

Ingredients

  • 2 pounds chicken breast halves, skinless and boneless
  • 2 - onions, yellow, medium, peeled and sliced
  • 1 pound turkey bacon or regular bacon
  • 1 small green pepper, cored and sliced
  • 2 medium apples, granny smith,peeled, cored and sliced
  • 1/2 cup pure maple syrup
  • 1 cup chicken broth
  • SPICE MIX
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon ginger
  • 1 teaspoon cumin
  • 2 teaspoons salt
  • 1 tablespoon brown sugar

How To Make spiced apple maple bacon chicken

  • Step 1
    Preheat the oven to 375 degrees.Cut up chicken breasts into large bite size cubes. Mix the spice mix together in a bowl and toss chicken in the mixture.
  • Step 2
    cut up the bacon into bite size pieces and separate the slices as much as possible. Add the chicken, bacon, onion, peppers to a saute pan and cook to slightly brown and soften vegetables then add to a large casserole dish.Add 1/2 cup of the chicken broth.
  • Step 3
    Place the casserole in the oven about 15 minutes, uncovered.Meanwhile, toss the cleaned, peeled apple slices with the maple syrup.Take the casserole out of the oven and add the maple syrup and apple mixture and incorporate. Add the other half of the chicken broth and continue to bake an additional 35-40 minutes and garnish with sliced green onions if desired and it's done!
