I don't think the Spanish part is true but it is the name of it.

Ingredients

  • 4 - chicken breast or thighs
  • 1 medium onion chopped
  • 6 tablespoons olive oil. i use about 4 actually
  • 1 can diced tomatoes. your favorite
  • 1/2 cup white wine
  • - season to taste. i like garlic salt
  • 1 medium bell pepper diced, your choice
  • 1 cup cooked again your choice

How To Make spanish chicken

  • Step 1
    Add 3tbs. of Oil to a med. stock pan w/ lid. Cook the onions for 4 min at med/high heat. Remove, add rest of oil and add chicken. Cook 4 min. per side. Add the onions again, season and add wine. Reduce by half, about 4 min, add tomatoes and bell pepper and coat nicely. Put on lid and reduce heat to low and cook 30min stirring occasionally.
  • Step 2
    While that is cooking make your rice by package directions. When done add to the chicken pot and stir. It is yummy!
