This is one of my favorite dishes to make. Yields a lot and only gets better with time. Feel free to experiment with different add ins!

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 4 - chicken breasts, roughly chopped
  • 4 - cloves of garlic
  • 1 - bay leaf
  • 1 - onion, sliced
  • 1 cup white wine, dry
  • 1 sm jar pimentos
  • 1 - handful of golden raisins
  • 1 cup chicken stock
  • 2 tablespoons butter

How To Make spanish chicken

  • Step 1
    Combine in a nonstick pan the olive oil, garlic, onion and chicken. Cook until onions are soft and chicken is cooked through.
  • Step 2
    Chop olives add to pan with pimentos and raisins. Cook just a few minutes before moving to next step.
  • Step 3
    Add white wine and bay leaf. Allow to simmer until liquid reduces to about half. Stir in butter and plate over rice once butter is incorporated!
