Ingredients For spaghetti squash boats

  • 1
    medium spaghetti squash{2 to 2/12} pounds
  • 1/2 lb
    minced chicken,,...or meat of your chcoice
  • 1
    large onion diced
  • 1/2 c
    chopped green pepper
  • 1/2 c
    sliced white or cremini mushrooms
  • 2 tsp
    cloves of crushed garlic
  • 1/2 tsp
    dried oregano
  • 1/2 Tbsp
    dried basil
  • 1 can
    14-1/2 ounce diced tomatoes drained
  • 1/2 c
    shredded mozzarella cheese
  • 1/2 c
    shredded parmeson cheese

How To Make spaghetti squash boats

    1 medium spaghetti squash {2 to 21/2 lbs}wash squash and cut in half lengthwise place squash cut side down in baking pan.fill with hot water to a depth of 1/2 inch.bake uncovered for 30 to 40 minutes in 375F oven when cool to handle with fork scoop up separating the strands..set aside.

    In skillet add 2 Tbsp coconut or canola oil add chicken and break up with spoon and saute til no longer pink.add vegetable and cook and stir for 10 minutes or liquid has evaporated..fill shells place in shallow baking pan bake uncovered for 15 minutes sprinkle with cheeses return to oven for another 5 minutes or until cheese melts..this makes 4 to 6 side dish serving or 2 main dish servings
