Ingredients
- 4 pounds whole chicken
- 1 cup soy sauce
- 1 cup dark soy sauce
- 1 cup shaoxing wine or dry sherry
- 3/4 cup brown sugar
- 1 tablespoon fennel seeds
- 3 - whole star anise
- 1 tablespoon roasted szechuan peppercorns.
- 1 - thick slice ginger peeled
- 10 cloves garlic sliced
- 1 stick cinnamon
- 4 cups water
- - cilantro for garnish
How To Make soy sauce chicken

Step 1Place all ingredients except chicken and cilantro in a large pot. Bring it to a boil.

Step 2Rinse the chicken in cool water and pat dry. Place the chicken in the boiling liquid breast side down. Reduce heat to a simmer.

Step 3Cover the pan and vent it a bit. Simmer the chicken for 1 hour turning every 15 minutes. Remove the chicken from the liquid. Place chicken on a carving board. Strain the liquid and discard any solids. Place the liquid in a pan and bring to a boil. Reduce the liquid for 15 minutes. Serve with the chicken Garnish the chicken with cilantro.
