I learned this recipe when I was living in Okinawa and it is a family favorite!

Ingredients

  • 21/2 lb
    chicken, in like size pieces
  • SAUCE

  • 2/3 c
    soy sauce
  • 4 slice
    fresh ginger
  • 2 Tbsp
    wine
  • 1/2-2/3 c
    sugar
  • 2 c
    water
  • 3-4 medium
    star anise
  • GARNISH

  • 3 sprig(s)
    green onions sliced on the bias for garnish

How to Make Soy Sauce Chicken

Step-by-Step

  1. Combine all ingredients except chicken and bring to a boil.
  2. Add chicken, cover, and cook for 10 minutes.
  3. Remove cover, lower heat
    Turn chicken and baste
    Add more water if needed
  4. Cook another 30 minutes
    Sauce should be thick, about 1 cup
  5. Cut large pieces of chicken in half and toss in sauce

    Garnish with 3 green onions sliced on the bias
  6. Serve over rice
