I learned this recipe when I was living in Okinawa and it is a family favorite!

Ingredients

  • 21/2 pounds chicken, in like size pieces
  • SAUCE
  • 2/3 cup soy sauce
  • 4 slices fresh ginger
  • 2 tablespoons wine
  • 1/2-2/3 cup sugar
  • 2 cups water
  • 3-4 medium star anise
  • GARNISH
  • 3 sprigs green onions sliced on the bias for garnish

How To Make soy sauce chicken

  • Step 1
    Combine all ingredients except chicken and bring to a boil.
  • Step 2
    Add chicken, cover, and cook for 10 minutes.
  • Step 3
    Remove cover, lower heat Turn chicken and baste Add more water if needed
  • Step 4
    Cook another 30 minutes Sauce should be thick, about 1 cup
  • Step 5
    Cut large pieces of chicken in half and toss in sauce Garnish with 3 green onions sliced on the bias
  • Step 6
    Serve over rice
