This is also a recipe I have previously used from a cookbook, and I love spicy food! I usually kick it up with extra chili powder or fresh diced jalapenos.

Ingredients

  • MARINADE:
  • 1/4 cup fresh lime juice
  • 1/4 cup apple juice
  • 1/4 cup vegetable oil
  • 2 cloves garlic, pressed
  • 2 teaspoons chili powder
  • 1 CHICKEN-CUT UP

How To Make southwest chicken

  • Step 1
    Mix up all of the ingredients for the marinade and then set the chicken in it and let refrigerate overnight, or about 6-8 hours.
  • Step 2
    When ready to cook, preheat the grill for about 15 minutes. While the grill is getting hot, take the chicken out of the marinade.
  • Step 3
    Take the extra marinade and heat it up in a sauce pan until boiling. Once this is done, shut off one of the burners on the grill and keep the rest on about medium.
  • Step 4
    Place the chicken over the burner that is not running, rotating and flipping every 15 minutes. Baste with the extra marinade that you previously boiled.
