This is also a recipe I have previously used from a cookbook, and I love spicy food! I usually kick it up with extra chili powder or fresh diced jalapenos.

Ingredients

  • MARINADE:

  • 1/4 c
    fresh lime juice
  • 1/4 c
    apple juice
  • 1/4 c
    vegetable oil
  • 2 clove
    garlic, pressed
  • 2 tsp
    chili powder
  • 1 CHICKEN-CUT UP

How to Make SouthWest Chicken

Step-by-Step

  1. Mix up all of the ingredients for the marinade and then set the chicken in it and let refrigerate overnight, or about 6-8 hours.
  2. When ready to cook, preheat the grill for about 15 minutes. While the grill is getting hot, take the chicken out of the marinade.
  3. Take the extra marinade and heat it up in a sauce pan until boiling. Once this is done, shut off one of the burners on the grill and keep the rest on about medium.
  4. Place the chicken over the burner that is not running, rotating and flipping every 15 minutes. Baste with the extra marinade that you previously boiled.
