Ingredients
- 1/3 cup corn oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 - red bell pepper, diced
- 2 - 3 teaspoons chili powder
- 2 teaspoons cumin
- 2 cans (15 oz. each) cannellini beans, rinsed and drained
- 1 cup frozen corn, thawed
- 2 cans (14 oz. each) chicken broth
- 2 cans (4 oz. each) chopped mild green chilies
- 4 - 5 cups cooked chicken cut into 1/2" pieces
- - salt and pepper to taste

Step 1Heat oil in large heavy pot over medium heat. Add onion, garlic, red bell pepper and spices. Saute 5 minutes. Add beans, corn, chicken broth, green chilies and chicken. Bring mixture to a boil and then simmer, stirring occasionally, 15 - 20 minutes. Season to taste with salt and pepper

Step 2Ladle into bowls and garnish with shredded Monterey Jack cheese.
