1Heat oil in large heavy pot over medium heat. Add onion, garlic, red bell pepper and spices. Saute 5 minutes. Add beans, corn, chicken broth, green chilies and chicken.
Bring mixture to a boil and then simmer, stirring occasionally, 15 - 20 minutes. Season to taste with salt and pepper
2Ladle into bowls and garnish with shredded Monterey Jack cheese.
