southwest chicken chili

Ingredients

  • 1/3 cup corn oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 - red bell pepper, diced
  • 2 - 3 teaspoons chili powder
  • 2 teaspoons cumin
  • 2 cans (15 oz. each) cannellini beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 2 cans (14 oz. each) chicken broth
  • 2 cans (4 oz. each) chopped mild green chilies
  • 4 - 5 cups cooked chicken cut into 1/2" pieces
  • - salt and pepper to taste

How To Make southwest chicken chili

  • Step 1
    Heat oil in large heavy pot over medium heat. Add onion, garlic, red bell pepper and spices. Saute 5 minutes. Add beans, corn, chicken broth, green chilies and chicken. Bring mixture to a boil and then simmer, stirring occasionally, 15 - 20 minutes. Season to taste with salt and pepper
  • Step 2
    Ladle into bowls and garnish with shredded Monterey Jack cheese.
