Ingredients

  • 1/2 c
    mayonnaise
  • 1/4 c
    minced green onions
  • 3 Tbsp
    buttermilk
  • 2 Tbsp
    fresh dill or 1 tsp. dried
  • 1/4 tsp
    black pepper
  • 1 lb
    boneless skinless chicken breasts (about 4)
  • 1 c
    white wine
  • 1/8 tsp
    black pepper
  • 1 c
    sliced water chestnuts
  • 1 sprig(s)
    fresh dill or 1 pinch dried
  • 1 1/2 c
    seedless grapes (red or green), halved
  • 1/2 c
    toasted pecan pieces
  • ·
    Bibb lettuce leaves (optional)

How to Make Southern Style Chicken Salad

Step-by-Step

  1. Dressing directions:
    Whisk first 5 ingredients together in small bowl. Can be made 1 day ahead. Cover & chill.
  2. Chicken Salad directions:
    Arrange chicken in heavy medium skillet. Add wine, dill & pepper. Season with salt. Add water if necessary to cover chicken. Simmer until chicken is just cooked through, turning once, about 11 minutes. Transfer chicken to plate to cool.
  3. Cut chicken into 1/2" pieces. Place in large bowl. Add grapes and water chestnuts. Mix in enough dressing to coat mixture thoroughly. Reserve remaining dressing. Refrigerate at least 1 hour to develop flavors.
  4. Before serving, add additional dressing if necessary. Arrange on lettuce leaves & sprinkle with pecans. Or add pecans to mixture & serve on croissants. Garnish with fresh dill springs if desired.
