Ingredients
- 1/2 cup mayonnaise
- 1/4 cup minced green onions
- 3 tablespoons buttermilk
- 2 tablespoons fresh dill or 1 tsp. dried
- 1/4 teaspoon black pepper
- 1 pound boneless skinless chicken breasts (about 4)
- 1 cup white wine
- 1/8 teaspoon black pepper
- 1 cup sliced water chestnuts
- 1 sprig fresh dill or 1 pinch dried
- 1 1/2 cups seedless grapes (red or green), halved
- 1/2 cup toasted pecan pieces
- - Bibb lettuce leaves (optional)
How To Make southern style chicken salad

Step 1Dressing directions: Whisk first 5 ingredients together in small bowl. Can be made 1 day ahead. Cover & chill.

Step 2Chicken Salad directions: Arrange chicken in heavy medium skillet. Add wine, dill & pepper. Season with salt. Add water if necessary to cover chicken. Simmer until chicken is just cooked through, turning once, about 11 minutes. Transfer chicken to plate to cool.

Step 3Cut chicken into 1/2" pieces. Place in large bowl. Add grapes and water chestnuts. Mix in enough dressing to coat mixture thoroughly. Reserve remaining dressing. Refrigerate at least 1 hour to develop flavors.

Step 4Before serving, add additional dressing if necessary. Arrange on lettuce leaves & sprinkle with pecans. Or add pecans to mixture & serve on croissants. Garnish with fresh dill springs if desired.
