southern chicken patties
I don't remember where I originally found this recipe, however, it was one I used a lot as a young bride in 1962. My recipe card is so faded (written in pencil, or course at that time), that I need to get it on here before I really can't read it anymore. Enjoy!

Ingredients
- 1/3 cup butter, melted
- 1/2 cup flour
- 2 1/4 cups milk
- 2 cups cooked chicken, diced or shredded
- 1/2 cup crackers, crushed
- 2 tablespoons parsley, chopped
- 1/2 teaspoon salt (or onion salt if preferred)
- - dash of pepper
- 1 - egg, slightly beaten with 1 tablespoon water
- 1 cup cracker crumbs
- 1/2 pound velvetta style cheese
- - oil for frying
How To Make southern chicken patties

Step 1Combine butter, flour and 1 3/4 cups milk in saucepan over medium heat stirring until thickened, creating a cream sauce.

Step 2Combine chicken, crushed crackers, parsley, salt, pepper, egg and 1 cup of cream sauce.

Step 3Chill.

Step 4Shape into 8 patties and coat with cracker crumbs.

Step 5Fry in hot oil (375 Degrees) until golden brown.

Step 6Blend 1/2 cup milk with remaining cream sauce and heat.

Step 7Add cheese and stir until melted.

Step 8Spoon cheese sauce over patties and serve.
