Ingredients
- 1 pound chicken breast halves, skinless and boneless
- 1 can black beans, canned
- 1 package goya yellow rice family size
- 1/2 cup green bell peppers
- 1/4 cup yellow and red bell peppers
- 1/2 cup onion
- - cumin
- - taco seasoning mix
- - cilantro, dried
- 4 1/2 cups chicken broth
- 2 tablespoons oil
- 1 1/2 cups mexican blend shredded cheese
How To Make south western chicken and rice

Step 1season the chicken with cumin, taco seasoning and cilantro cover both sides of chicken and refrigerate.For 2-4 hrs. Cut chicken in strips

Step 2Heat oil til med-hi heat. Place chicken strips in oil. cook for 3-5 mins and stir. Place chicken on a plate to the side. Add the peppers and onion to the oil and cook 2-3 mins.

Step 3Add the rice and stir cook for 1 min. Add black bean didn't drain stir. Add the broth and 1 tbsp of cumin, cilantro and 2tbsp taco seasoning. Add the chicken.

Step 4Stir mixture and let boil for 1 min cover and lower heat. Let simmer for 25 mins. Stir in 1/2 of cheese cover

Step 5let sit for 5 mins. Sprinkle the cup of cheese over the rice mixture and enjoy
