This is a recipe I always request when I visit my mom.

Ingredients

2 c
cooked rice
2 c
shredded monterray jack cheese
1 1/2 c
cooked, chopped chicken breast
1 can(s)
carnation cream
1/2 small
red onion finely diced
2 large
eggs, slightly beaten
1/4 c
fresh chopped cilantro (optional)
2 Tbsp
melted butter (or margine)
1 Tbsp
diced jalapenos (optional)

Step-By-Step

1Preheat oven to 350 degrees. Grease a 2 quart casserole dish.
2Combine ingredients well in dish.

Bake 45 to 50 minutes or until knife inserted in center comes out clean.
