Ingredients
- 2 cups cooked rice
- 2 cups shredded monterray jack cheese
- 1 1/2 cups cooked, chopped chicken breast
- 1 can carnation cream
- 1/2 small red onion finely diced
- 2 large eggs, slightly beaten
- 1/4 cup fresh chopped cilantro (optional)
- 2 tablespoons melted butter (or margine)
- 1 tablespoon diced jalapenos (optional)
How To Make south texas chicken and rice

Step 1Preheat oven to 350 degrees. Grease a 2 quart casserole dish.

Step 2Combine ingredients well in dish. Bake 45 to 50 minutes or until knife inserted in center comes out clean.
