Ingredients

  • 1 cup sour cream
  • 3 cups monterey jack cheese
  • 1 can chopped tomatoes with cilantro and lime,drained
  • 1 can chopped green chiles,drained
  • 2 pounds chicken breasts, boneless and skinless, cooked in oliveoil till done, then chopped up small enough for mixture
  • 1 package small corn tortillas
  • salt/peppe teaspoon 1-tsp. add to mixture,add 1 cup cheese,mix together, set aside, heat oil in skillet, place 4 tortillas at a time,heat for 5-10sec. remove add1/4-1/2 cup of filling roll up and place in 9x13 casserole dish until full, bake @325 for approximately 15-
  • MIX INGREDIENTS, SET ASIDE, HEAT OIL, ADD TORTILLAS, IN SKILLET, FOR 5-10 SEC, 4 AT A TIME, REMOVE, ADD 1/4-1/2 CUP FILLING , ROLL UP SEAM SIDE DOWN IN GREASED CASSEROLE DISH, UNTIL DISH IS FULL, BAKE @325 FOR 15-18MIN. REMOVE FROM OVEN ADD CHEESE

  • Step 1
    mix ingredients together along with 1 cup of monterey jack cheese, in bowl, set aside, heat oil in nonstick skillet,add 4/tortillas @a time form 5-10sec. remove add1/4-1/2 cup filling , roll up seam side down,place in a 9x13 greased casserole dish, until you fill dish with filled tortillas, pour enchilada sauce or sphagetti sauce{1cup} on top, top with remaining cheese, bake@325 for 15-18min. may want to cover cheese so it won't brown, remove from oven and serve with schredded lettuce enjoy!
