sour cream salsa chicken in a crockpot

This recipe was given to me at a Weight Watchers meeting. I ran it thru my MasterCook program for nutritional values, and came up w/ 3 POINTS per serving. Disclaimer: I have not made this recipe, yet. I am posting it as a response in answer to others' requests for some new, different and interesting Weight Watchers recipes.

Ingredients

  • 4 - boneless, skinless chicken breast halves
  • 1 package taco seasoning
  • 1 cup salsa
  • 2 tablespoons cornstarch
  • 1/4 cup light sour cream

How To Make sour cream salsa chicken in a crockpot

  • Step 1
    Spray crock pot with EVOO Pam. Add chicken breast halves, sprinkle with taco seasoning, and top with the salsa.
  • Step 2
    Cook on LOW for 6 hours.
  • Step 3
    Remove chicken from pot. Set aside and keep it warm.
  • Step 4
    Mix cornstarch with about a teaspoon of water, and stir well to dissolve. Pour cornstarch into the salsa in the crockpot. Stir in the sour cream. Replace the crockpot lid, and turn the temp to HIGH. Allow the sauce to thicken.
  • Step 5
    Serve chicken with salsa ladled over the top of it. A side of mexican rice goes well with this!
