I got this recipe years ago from a set of recipes my husband bought me. My daughter renamed it Snap Crackle Pop Chicken when she was about 8 years old because of the ingrediants. I just recently made it again and served it with my Jalepeno Ranch dressing. My son loved it and he too (now the age brittney was when she first had it) called it snap crackle pop chicken lol. Its made from just a few ingrediants and is an incredibly easy kid friendly meal.

Ingredients

  • ·
    8 boneless and skinless chicken thighs or 4 boneless skinless chicken breasts
  • ·
    2 c rice krispy cereal
  • ·
    1 envelope hidden valley ranch dressing mix
  • ·
    1/2 c grated parmesan cheese
  • ·
    2 egg white beaten

How to Make Snap Crackle Pop Chicken

Step-by-Step

  1. Spray a baking sheet with non stick cooking spray and set aside.
  2. Mix together cereal, ranch dressing mix and cheese in a bowl large enough to dip chicken into
  3. Dip each piece of chicken in the egg whites and then in the cereal mix, being sure all parts are coated.
  4. Place chicken on prepared baking sheet and pop in a 350 degree preheated oven. Bake till cooked thru completely and chicken is very tender. Around 30 to 40 minutes
  5. Serve with your favorite dipping sauces. I put out my jalepeno ranch dressing and also some honey mustard, and buttermilk ranch. Add some oven baked fries and corn on the cob and your kids will smile : )
