I had something like this at Friendly's, and thought I could do it better. This is really good served over angel hair pasta with butter and sliced green onions mixed in.

Ingredients
- 1 pint boneless chicken breasts or thighs
- 2 - green onions/scallions, chopped
- 1 - each--green and red pepper, chopped
- 1 cup chopped tomato
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon dry chicken boullion
How To Make smothered chicken breasts

Step 1Season the chicken with the garlic powder and boullion. You can either fry the chicken breasts until brown and the juices run clear, or bake them

Step 2When cooked thru, put a little of each of the veggies on top of each piece of chicken and top with some of the cheese. Cover the pan for a minute, or pop under the broiler, just until the cheese melts.

Step 3Great served with rice or pasta
