I had something like this at Friendly's, and thought I could do it better. This is really good served over angel hair pasta with butter and sliced green onions mixed in.

Ingredients

  • 1 pint boneless chicken breasts or thighs
  • 2 - green onions/scallions, chopped
  • 1 - each--green and red pepper, chopped
  • 1 cup chopped tomato
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dry chicken boullion

How To Make smothered chicken breasts

  • Step 1
    Season the chicken with the garlic powder and boullion. You can either fry the chicken breasts until brown and the juices run clear, or bake them
  • Step 2
    When cooked thru, put a little of each of the veggies on top of each piece of chicken and top with some of the cheese. Cover the pan for a minute, or pop under the broiler, just until the cheese melts.
  • Step 3
    Great served with rice or pasta
