smoky mountain chicken and rice casserole
This recipe is from Cooking.com. I made it in the crockpot since my oven is out of commission at the moment. It was great, everyone loved it. Hope you enjoy it as well. The chipotle peppers give it a great smoky flavor.

Ingredients
- 2 cups sour cream
- 1 can 10 3/4-ounce condensed cream of chicken soup
- 2 - chipotle peppers in adobo sauce, finely chopped
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 cups cooked rice
- 2 cups shredded cooked chicken
- 2 cups shredded smoked cheddar cheese
How To Make smoky mountain chicken and rice casserole

Step 1Preheat oven to 400 degrees. Lightly coat 13x9x2-inch baking dish with cooking spray. In large bowl, mix sour cream, soup, chipotles, salt and pepper until well blended. Stir in rice, chicken and cheese. Spoon into baking dish. Bake uncovered in preheated oven 20-25 minutes, until edges of casserole are bubbly. Turn oven to broil setting and lightly brown casserole.

Step 2NOTE: I mixed everything together and cooked in the crockpot for a couple of hours on low, because my oven was not working. Next time I will bake it. I can't imagine it being any better.
