    chicken breast halves, skinless and boneless
  • 2
  • 1 1/2
    bread crumbs, seasoned
  • 1/2 c
    parmigiano-reggiano, grated
  • ·
    salt and pepper
  • ·
    olive oil, extra virgin

How to Make Smashed Chicken


  1. Place 1 chicken breast at a time into a large ziplock and pound flat
  2. Mix bread crumbs, cheese and salt and pepper
  3. Dip into beaten eggs
  4. Coat with bread crumb mixtuer and fry in evoo until golden brown
