slow cooker sandwich filling

You can use chicken, pork, or beef in this recipe. I like chicken thighs. This recipe is easy and uses items that are usually found in your pantry. This can be changed up a bit by using different seasoning combos. I like to use this filling for burritos. I also make this filling for sandwiches to take to work. I don't eat much luncheon meats and this fits my tastes very nicely. I cook it Sunday to have ready for lunches for the rest of the week. I serve it when I have company over and also have errands to attend to before company gets here. Everyone loves this. Hope you do too. :)

Ingredients
- 3 tablespoons mrs. dash southwest chipotle seasoning blend
- 3 pounds chicken thighs, skinless and boneless
- 1 large red pepper-chopped
- 1 large onion-chopped
- 1/4 cup chicken stock (or beef stock if using beef)
- 1/4 cup ketchup
- 1 (4oz) can green chilies or jalapeno peppers-chopped
- - buns, tortillas, or wraps
How To Make slow cooker sandwich filling

Step 1Season meat with seasoning blend. Place pepper and onion in slow cooker. Place meat on top. Mix stock and ketchup; pour over meat and vegetables.

Step 2Cook on low setting 6 to 8 hours. Remove meat and shred. Place meat back into cooker. Add green chilies or jalapeno peppers and stir to mix. Serve on bun, in wrap, or etc.

Step 3NOTE: I also like to use Mrs. Dash Fiesta Lime seasoning blend or you can use your favorite creole seasoning blend. Experiment and see how many great tasting seasoning combo you can come up with.
