Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 cup tomatoes, petite, diced (low sodium)
  • 2 tablespoons taco seasoning
  • 1 cup onions, finely diced
  • 1/2 cup celery, finely diced
  • 1/2 cup carrots, shredded
  • 3 tablespoons sour cream reduced fat

  • Step 1
    Place the chicken in a slow cooker.
  • Step 2
    Sprinkle taco seasoning over the meat, then layer the vegetables and salsa on top.
