    boneless, skinless chicken breasts
  • 1 c
    salsa
  • 1 c
    tomatoes, petite, diced (low sodium)
  • 2 Tbsp
    taco seasoning
  • 1 c
    onions, finely diced
  • 1/2 c
    celery, finely diced
  • 1/2 c
    carrots, shredded
  • 3 Tbsp
    sour cream reduced fat

How to Make Slow-Cooker Salsa Chicken

Step-by-Step

  1. Place the chicken in a slow cooker.
  2. Sprinkle taco seasoning over the meat, then layer the vegetables and salsa on top.
  3. Pour 1/2 cup water over the mixture, set on low and cook 6 to 8 hours.
  4. When ready to serve, break up the chicken with two forks then stir in sour cream.
