Ingredients
- 2 cans 15 oz. each, garbanzo or navy beans, rinsed and drained (we leave these out by preference)
- 1 package 10 oz. frozen spinach
- 1 pound chicken, boneless/skinless or pork tenderloin
- 2 cans 14-1/2 oz. each, chicken broth- 1/3 less sodium
- 1 cup water
- 1 can diced tomatoes, no salt added
- 1 large sweet potato, peeled and cubed
- 1 large onion, chopped
- 1 - red bell pepper, seeded and chopped
- 1 - yellow bell pepper, seeded and chopped
- 2 teaspoons paprika
- 2 teaspoons ground cumin
- 1/4 teaspoon salt (optional)
- 8 dashes fresh ground pepper
- 8 dashes cayenne/hot sauce (optional)
