Mexican and Tex-Mex are a family favorite. This one looked good enough to pinch from another website. Suggest you adjust the seasonings to your personal preferences as to spiciness.

Ingredients

  • 1 - each green, red and yellow pepper, cut into strips
  • 1 large onion, cut into strips
  • 2 pounds boneless beef sirloin, cut into strips
  • 3/4 cup water
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cayenne pepper
  • 8 - 8" flour tortillas, warmed
  • 1/2 cup salsa
  • 1/2 cup cheddar, shredded
  • 1 1/8 teaspoons fresh cilantro, minced

How To Make slow cooker fajitas

  • Step 1
    Place peppers and onions in a 5-quart slow cooker; top with beef.
  • Step 2
    Combine water, vinegar, lime juice, and seasonings. Pour over meat.
  • Step 3
    Cover and cook on low for 8-9 hours or until tender.
  • Step 4
    Spoon onto tortillas and top with cheese, cilantro, salsa and any other of your favorite fajita toppings.
