Ingredients
- 2 pounds boneless, skinless chicken breasts, cut into 1/2 inch pieces
- 1 - red bell pepper, diced
- 1 - yellow bell pepper, diced
- 1 - onion, diced
- 1 can (16 ounces) cannellini beans, rinsed and drained
- 1 can (14 ounces) crushed or diced tomatoes
- 2 - cloves garlic, crushed
- 2 tablespoons extra virgin olive oil
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon dried thyme (chopped) optional
- - kosher salt
- - freshly ground pepper
- 2 tablespoons brown sugar (optional)
