Busy work days don't always allow much time for cooking when you get home. Nothing saves time better than my slow cooker and a few pantry items to make a great weeknight meal. The slow cooker does the work for you - just toss a quick green salad and you have an easy, no stress dinner for two!

Ingredients
- 2 medium boneless, skinless chicken breasts
- 1/2 small roughly chopped yellow onion
- 1 can 10 3/4 oz can cream of chicken & mushroom soup
- 1 can 10 3/4 oz cream of broccoli soup
- 1 cup chicken stock
- 2 small bay leaves
- 1 teaspoon thyme
- 1-2 pinch salt and pepper to taste
How To Make slow cooker chicken for 2

Step 1Prep: Roughly chop the onion and place all ingredients into your slow cooker and stir, then top with the chicken. Add additional stock or water to cover the chicken completely.

Step 2Set your cooker on LOW to cook for 6-8 hours. When you're ready, remove the bay leaves and serve along side a tossed green salad; or add 1/2 head of fresh broccoli for the last 1/2 hour of cooking, serve with rice.
