slow cooker chicken chili

This is great and so easy to make. The recipe recommends "coarsely ground" chicken and I agree - it makes a HUGE difference over regular ground chicken.

Ingredients

  • 2 pounds ground chicken, coarsely ground preferred
  • 3 tablespoons chili powder, plus 2 teaspoons
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cans (28 oz) diced fire roasted tomatoes
  • 1 medium potato, peeled and shredded
  • 2 tablespoons soy sauce
  • 1 tablespoon kosher salt
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 3/4 cup lager-style beer (optional)
  • - toppings: sour cream, shredded cheese, chopped scallions, chopped jalapenos

How To Make slow cooker chicken chili

  • Step 1
    Put the chicken in the slow cooker. Add 3 tablespoons of the chili powder and all the rest of the ingredients, except for the beer. Stir everything together, cover, and cook on LOW 6-8 hours.
  • Step 2
    Just before serving, stir in the remaining 2 teaspoons chili powder, the beer, and season with more salt and pepper, if desired. Divide the chili among warm bowls. Serve with toppings of your choice.
  • Step 3
    *TIP* - Stirring the 2 teaspoons of chili powder in right before serving brightens the flavor of the chili.
