Slow Cooker Chicken Cacciatore

I came up with this last Sunday when I needed an easy fix for chicken. Turned out GREAT! Family loved it! Served it with a salad & broccoli.

    chicken breast halves, skinless and boneless (or 1.5 lb chicken tenders)
  • 1 can(s)
    28 oz, petite diced tomatoes
  • 1 can(s)
    water (rinse the tomato can)
  • 1
    envelope lipton savory herb & garlic soup mix
  • 1
    green pepper, chopped
  • 1
    onion, thinly sliced
  • 1
    bag, boil-in-bag rice
  • ·
    shredded mozzerella cheese, for sprinkling
  • ·
    grated parmesan cheese, for garnish
  • ·
    cornstarch for thickening, if desired

How to Make Slow Cooker Chicken Cacciatore


  1. Put everything but rice in slow cooker. Cook on high for 4 hours total.
  2. with 30 minutes left to cook, put the boil-in-bag of rice in slow cooker. Make sure it is completely covered with liquid.
  3. Remove rice bag to plate/serving dish. Mix cornstarch with water and add to liquid to thicken, if desired.
  4. Serve over rice and sprinkle cheeses on top.
