slow cooker chicken cacciatore

I came up with this last Sunday when I needed an easy fix for chicken. Turned out GREAT! Family loved it! Served it with a salad & broccoli.

Ingredients

  • 4 - chicken breast halves, skinless and boneless (or 1.5 lb chicken tenders)
  • 1 can 28 oz, petite diced tomatoes
  • 1 can water (rinse the tomato can)
  • 1 - envelope lipton savory herb & garlic soup mix
  • 1 - green pepper, chopped
  • 1 - onion, thinly sliced
  • 1 - bag, boil-in-bag rice
  • - shredded mozzerella cheese, for sprinkling
  • - grated parmesan cheese, for garnish
  • - cornstarch for thickening, if desired

How To Make slow cooker chicken cacciatore

  • Step 1
    Put everything but rice in slow cooker. Cook on high for 4 hours total.
  • Step 2
    with 30 minutes left to cook, put the boil-in-bag of rice in slow cooker. Make sure it is completely covered with liquid.
  • Step 3
    Remove rice bag to plate/serving dish. Mix cornstarch with water and add to liquid to thicken, if desired.
  • Step 4
    Serve over rice and sprinkle cheeses on top.
