Slow-Cooked Chicken In Wine Sauce

Just a bit if wine to add great flavor to a fantastic dish,great for entertaining,even in a camper!

4 slice
bacon,cut into pieces
1/4 c
all purpose flour
1/2 tsp
kosher salt
1/8 tsp
black pepper
3-3 1/2 lb
cut-up frying chicken;skin removed,or boneless parts of chioce
1 1/2 c
baby carrots
1 c
frozen tiny onions,thawed
1 jar(s)
mushrooms,drained ,4.5 ounce size whole
1 clove
3/4 c
merlot wine
1/2 c
chicken stock
2 tsp
parsley flakes
1/2 tsp
dried thyme leaves
1/2 tsp
dried marjoram leaves
1/4 c
2 Tbsp
all purpose flour
2 Tbsp
chopped fresh parsley


1Cook bacon in a large non-stick pan.Medium heat until crisp.
2Remove the bacon,DRAIN on paper towels.REFRIGERATE UNTIL NEEDED.
3Remove and discard all but 2 tbsps. of the bacon drippings from skillet.
4Combine 1'/4 cup flour ,salt and pepper,mix well.Coat chicken pieces well with the flour mixture.
5Add the chicken piecesto skilletcok 7-10 minutes or until deep golden brown on all sides.
6Place the browned chicken in a crockpot.
7In same skillet,combine the carrots,onions,mushrooms,and garlic.Cook and stir over medium heat about 5 minutes or until lightly browned.
8Add to the chicken in the crockpot.
9Add the wine,broth,dried parsley,thyme,and marjoram to same skillet,cook and stir until hot,scraping up BITS from bottom of the skillet.Pour over the chicken in the crockpot.
10COVER and cook on LOW for 7-9 hours.until chicken is fork-tender.and its juices run clear and veggies are tender.
11REMOVE THE CHICKEN AND VEGGIES with a slotted spoon.Place on a serving platter.COVER WITH FOIL TO KEEP IT WARM.
12in a small bowl,combine water and 2 tbsps. of flour;blend well.Add to crockpot,increase temperature to HIGH setting,cook until thickened.
13Sprinkle chicken with the reserved bacon and chopped parsley.
