slimming vegetable soup
Women's World magazine (except they called it "Fat Flush Soup"). To me that didn't sound so appitizing, so I changed it to "Slimming Vegetable Soup". It sounds simular to the "Cabbage Soup Diet".

Ingredients
- 2 teaspoons olive oil, extra virgin
- 1 1/4 pounds lean ground beef, turkey or shredded chicken
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 small bell pepper, seeded & chopped
- 8 ounces mushrooms, fresh, chopped
- 1 - 14 oz. cans tomatoes, crushed
- 1 - 32 oz. bottles v-8 juice, reduced-sodium
- 1 tablespoon lemon juice, fresh
- 1 - 14 oz. cans beans, rinsed & drained (it doesn't state what kind of beans - i would use kidney or garbanzo)
- 1 tablespoon cumin, ground
- 1/8 teaspoon cayenne pepper, or to taste
- 1/4 cup cilantro, fresh, chopped
- 1/4 cup parsley, fresh, chopped
How To Make slimming vegetable soup

Step 1In a stockpot, heat oil over medium-high heat. Saute meat/poultry until cooked through, about 5 minutes. Drain & set aside.

Step 2Saute onion, garlic, bell pepper & mushrooms until soft, about 5 minutes.

Step 3Stir in remaining ingredients, except cilantro & parsley. Cover & simmer 20 minutes. Stir in cilantro & parsley. Cover, simmer 10 minutes longer. Store soup in frige up to 5 days. Freezes well.
