Found this in a Taste of Home magazine and while it has a little zip it is loved by us both. Don't be afraid because I am a baby on heat, but it is great.

Ingredients For skillet fajitas

  • 2
    flour tortillas cut in 1/2 inch strips
  • 3 Tbsp
    olive oil
  • 1/2 lb
    chicken breast cut in strips
  • 1 md
    green pepper cut in strips
  • 1 md
    onion diced
  • 2 Tbsp
    soy sauce, low sodium
  • 2 tsp
    brown sugar
  • 1/2 tsp
    chili powder
  • 1/2 tsp
    cumin
  • 1 tsp
    cornstarch
  • 1/4 tsp
    ground pepper
  • 2 Tbsp
    lemon juice
  • 1 c
    diced pineapple
  • 1 can
    small tomato sauce

How To Make skillet fajitas

    Saute in oil the chicken, green peppers and onions until the chicken is partially cooked and then add the soy sauce, brown sugar and seasonings. Simmer until chicken is done. Now add to pan the cornstartch, lemon juice, pineapple and tomato in whatever form you choose an bring to a boil and cook for 1 minute. Place olive oil in another skillet and warm and then drop the tortilla strips into the pan turning them and moving them about to get some color and flavor on all. Place chicken in bowl and sprinkle some tortillas on top and serve. You can add sour cream or avocado to this as well for a great simple dinner. ENJOY
