Needed something to fix for Mother's Day. Decided a healthy one pot meal for Mom would be good.

Ingredients

  • 8 .oz - sour cream, fat-free
  • 2.07 .lb - chicken tenders, cut into chunks
  • 1 tablespoon crack black pepper mayo
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 11/2 tablespoons perfect pinch for vegetables by mccormick
  • 11/2 tablespoons greek vinaigrette
  • 1 - medium squash, sliced
  • 1/2 cup onon, chopped
  • 20 - brussel sprouts, sliced
  • 14.5 oz. cans cut green beans, drained
  • 2 - liquid flavor boost, chicken flavr b swanson
  • 1/3 cup water, add water as needed.
  • 10.5 oz. - grape tomatoes, sliced
  • 2 tablespoons olive oil

How To Make skillet chicken dinner

  • Step 1
    In a small bowl combine the sour cream and chicken: stir to combine.
  • Step 2
    Add the next 5 ingredients, and stir. Cover and place in the refrigerator over night.
  • Step 3
    Next day heat oil in a large deep skillet. Add the chicken, leaving some sauce on the chicken. Stir fry about 3 to 4 minutes.
  • Step 4
    Add the onion, Brussel sprouts, green beans, and the squash, and the water.
  • Step 5
    Add the 2 flavor boost chicken packets. Simmer for 25 minutes or until vegetables are tender.
  • Step 6
    Add the tomatoes slices, and simmer 3 more minutes.
