sis’ better than take-out sesame chicken

My sister's recipe and she made it for us tonight. Turned out so good, I just had to share it here. She has been visiting for a few days but tomorrow she goes back home. It's really easy to make, so don't be put-off by the long list of ingredients.

Ingredients

  • - 2 tbsp. soy sauce
  • - 1 tbsp. dry sherry
  • - 1 tsp. sesame oil
  • - 1 tsp. vegetable oil
  • - 2 tbsp. all-purpose flour
  • - 2 tbsp. cornstarch
  • - ¼ tsp. baking powder
  • - ¼ tsp. baking soda
  • - 2 tbsp. water
  • - 4 boneless- skinless chicken breasts, cut into 1-inch cubes
  • - 4 cups vegetable oil for frying
  • SAUCE
  • - ½ cup water
  • - 1 cup chicken broth
  • - ¼ cup rice vinegar
  • - 2 tbsp. soy sauce
  • - 2 tbsp. sesame oil
  • - 1 tsp. teaspoon red chile paste
  • - 1 clove garlic, grated or finely minced
  • - ¼ cup cornstarch
  • - 1 cup white sugar
  • - 2 tbsp. toasted sesame seeds, garnish
  • - chopped green onion or chives, garnish (optional)

How To Make sis’ better than take-out sesame chicken

  • Step 1
    Combine first nine ingredients together in mixing bowl. Mix well; stir in the chicken cubes. Cover and refrigerate for 1 hour.
  • Step 2
    Meanwhile make the sauce. Mix sauce ingredients in a small/medium saucepan and bring to a boil; whisking constantly. Remove from heat but keep warm, stirring occasionally.
  • Step 3
    Heat oil in a deep-fryer or large saucepan to 375º F.
  • Step 4
    Remove a few pieces of chicken and allow excess batter to drip away. Fry in batches until cooked through and golden brown, (about 4-5mins.). Drain on paper towel and keep warm while you continue to fry the remaining chicken pieces.
  • Step 5
    Transfer the chicken to a large platter, top with sauce, and sprinkle with sesame seeds and chopped green onion, if using. Serve with steamed asparagus, green beans or carrot sticks and white rice.
