sinful honey mustard chicken
This is a recipe that I had to figure out how to make because it was my favorite at a restaurant that was near where I used to live. When I moved, I couldn't find anything to match it anywhere around, so I had to make my own. Most people like this one better!

Ingredients
- 1 tablespoon olive oil or safflower oil
- 2-3 large chicken breasts
- 1/2 cup water
- 2-3 tablespoons honey mustard dipping sauce (like Ken's)
- 1 medium onion, chopped in large pieces
- 1 cup sliced mushrooms
- 1/2 cup pre-cooked crumbled bacon
- 1/2 cup shredded Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese

Step 1Heat a skillet over medium flame. Add oil when hot. Then fry the chicken breast until browned on both sides. Remove from the skillet to a plate, cover with foil to keep warm.

Step 2Remove oil from the pan. Heat the pan. Add water to deglaze the pan.

Step 3Add the honey mustard sauce.

Step 4When the honey mustard is completely stirred in, pour the sauce over the cooked chicken. Wash out the skillet before the next step.

Step 5Preheat oven to 450 degrees F. Heat a skillet over medium flame. Add oil when hot. Cook onions until soft. Add mushrooms to the skillet. Cook until soft (may add more oil if necessary).

Step 6Then add the bacon.

Step 7Place chicken in a baking dish.

Step 8The sauce that is leftover on the plate should then be added to the skillet with the onion mixture. Cook the mixture and sauce until it has thickened.

Step 9Pour the onion and sauce mixture over the chicken, making sure that most of the onion mixture is on top of the breasts.

Step 10Cook the breast in the oven for about 15 minutes or until the onion mixture is a crispy brown color.

Step 11Sprinkle the cheeses over the top of the chicken and continue cooking for another 5 minutes so that all the cheese is melted and the internal temperature reaches 165 degrees F. Serve hot.
