This recipe came from a friend of mine who taught me to love curried dishes. This one is super easy. I often use meat from pre-cooked whole chickens to make this and other chicken dishes.
I like it best with dried cranberries.
When rice mix is finished add chicken, curry, almonds, and raisins or cranberries. Mix well. Cover and heat. Remove from heat, leave cover on, and allow to set for 10 minutes.
