2 cparboiled cooked rice, cold
2boneless chicken breast, cut into small pieces
1 bunchscallions, chopped
1 smallcan, drained peas & carrots
2 Tbspolive oil
3eggs, scrambled & chopped
1 csoy sauce
How to Make Simple Chicken Fried Rice
- Make the 2 cups of rice and refrigerate
- While the rice refrigerates, saute the scallions in a wok (or a large pan) for a minute. Then, stir in the cut up chicken pieces until they brown.
- Add the cold rice and stir fry. While it stir fries, add the soy sauce, chopped scrambled eggs and drained peas & carrots. Adjust to your taste with the soy sauce.
