Sometimes you just have to make it yourself. This recipe is very simple and the ingredients are easily obtainable.

Ingredients

  • 2 cups parboiled cooked rice, cold
  • 2 - boneless chicken breast, cut into small pieces
  • 1 bunch scallions, chopped
  • 1 small can, drained peas & carrots
  • 2 tablespoons olive oil
  • 3 - eggs, scrambled & chopped
  • 1 cup soy sauce

How To Make simple chicken fried rice

  • Step 1
    Make the 2 cups of rice and refrigerate
  • Step 2
    While the rice refrigerates, saute the scallions in a wok (or a large pan) for a minute. Then, stir in the cut up chicken pieces until they brown.
  • Step 3
    Add the cold rice and stir fry. While it stir fries, add the soy sauce, chopped scrambled eggs and drained peas & carrots. Adjust to your taste with the soy sauce.
