Ingredients
- 2 cups parboiled cooked rice, cold
- 2 - boneless chicken breast, cut into small pieces
- 1 bunch scallions, chopped
- 1 small can, drained peas & carrots
- 2 tablespoons olive oil
- 3 - eggs, scrambled & chopped
- 1 cup soy sauce
How To Make simple chicken fried rice

Step 1Make the 2 cups of rice and refrigerate

Step 2While the rice refrigerates, saute the scallions in a wok (or a large pan) for a minute. Then, stir in the cut up chicken pieces until they brown.

Step 3Add the cold rice and stir fry. While it stir fries, add the soy sauce, chopped scrambled eggs and drained peas & carrots. Adjust to your taste with the soy sauce.
