    parboiled cooked rice, cold
  • 2
    boneless chicken breast, cut into small pieces
  • 1 bunch
    scallions, chopped
  • 1 small
    can, drained peas & carrots
  • 2 Tbsp
    olive oil
  • 3
    eggs, scrambled & chopped
  • 1 c
    soy sauce

How to Make Simple Chicken Fried Rice

Step-by-Step

  1. Make the 2 cups of rice and refrigerate
  2. While the rice refrigerates, saute the scallions in a wok (or a large pan) for a minute. Then, stir in the cut up chicken pieces until they brown.
  3. Add the cold rice and stir fry. While it stir fries, add the soy sauce, chopped scrambled eggs and drained peas & carrots. Adjust to your taste with the soy sauce.
