This is an old family recipe that features easy prep and a to-die-for gravy. Serving hint: I take 3-4 of the potato pieces and mash them with my fork and add plenty of that good gravy. Makes the best mashed potato's ever. Enjoy!

Ingredients

  • 1 - whole chicken or your choice of pieces.
  • 1 stick butter, quartered
  • 4 - chicken bullion cubes or 1 tbsp. better than bullion chicken base
  • 2 cups water
  • 1 - large onion, chopped
  • 4 - cloves of garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • - potatoes, cut-up, your choice, i buy russets most of the time
  • - carrots, your choice, peeled and cut into chunks

How To Make sicilian chicken

  • Step 1
    Preheat oven to 350 degrees on Bake.
  • Step 2
    Add butter, bullion, onion, garlic and water to roaster. I use a blue-speckled oval roaster. Add chicken on top then salt and pepper the chicken.
  • Step 3
    Cover and bake for 1 hour.
  • Step 4
    Peel and cut-up potatoes and carrots. I use medium potatoes and quarter them and I use baby carrots for convenience. Cover with water.
  • Step 5
    After chicken has baked for 1 hour, drain water from potatoes and carrots, add around chicken and cook for another 30 minutes.
