sicilian chicken
This is an old family recipe that features easy prep and a to-die-for gravy. Serving hint: I take 3-4 of the potato pieces and mash them with my fork and add plenty of that good gravy. Makes the best mashed potato's ever. Enjoy!

How To Make sicilian chicken
-
Step 1Preheat oven to 350 degrees on Bake.
-
Step 2Add butter, bullion, onion, garlic and water to roaster. I use a blue-speckled oval roaster. Add chicken on top then salt and pepper the chicken.
-
Step 3Cover and bake for 1 hour.
-
Step 4Peel and cut-up potatoes and carrots. I use medium potatoes and quarter them and I use baby carrots for convenience. Cover with water.
-
Step 5After chicken has baked for 1 hour, drain water from potatoes and carrots, add around chicken and cook for another 30 minutes.
