This is really good. Make sure you use day old rice.

Ingredients

  • 2 - boneless chicken thighs, cut into chunks
  • 10 large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cooked rice that is day old
  • 1 cup frozen peas, thawed
  • 2 teaspoons sesame oil
  • 3 tablespoons soy sauce
  • 1 teaspoon butter
  • 4 large eggs scrambled

How To Make shrimp and chicken fried rice

  • Step 1
    Place 2 tablespoons of butter in a wok or skillet. Add the garlic and cook until it becomes fragrant. Add the chicken and stir fry for 2 minutes.
  • Step 2
    Add the rice and break up the clumps, and press down to toast it, turning and toasting on the other side. Add the peas stir fry for 2 minutes.
  • Step 3
    Add sesame oil and soy sauce. Move the rice to the side and add the 1 tablespoon of butter. Add the shrimp and cook until pink.
  • Step 4
    Make a well in the middle of the stir fry and add the eggs. Stir fry the eggs while incorporating them into the rice mixture. Taste and adjust for salt.
