shredded chicken taco's
Easy meal you can add or substitute what ever ingredients you like. The chicken can be cooked ahead of time either boil, bake or use instapot. I've added tomatillos and peppers. You can also use pork instead of the chicken. The tortilla's we like are only 3 neg gram of carbohydrates so it fits our diet.

- 2 - chicken breast
- 1 can tomato and green chili
- 1/2 - onion, diced
- 2 - avacados
- 3 tablespoons burrito seasoning mix
- - mexican or cheddar cheese
- - black olives
- - sour cream

Step 1Cook Chicken breast, either boil or bake. When cooked, shred

Step 2In frying pan, add chicken, onion, tomatoes and green chili's and burrito seasoning mix. Bring mixture to a boil, then reduce heat, simmer allowing liquid to reduce.

Step 3Microwave tortilla for 30 seconds, spread avocado on tortilla, add chicken mix, garnish with cheese, sour cream, black olives, shredded lettuce.
