sheet pan essentials: half chicken with veggies
This is an excellent way to put together a half chicken and some veggies for a wonderful evening meal. This recipe takes a bit of planning because you will marinate the chicken overnight, and then leave it uncovered in the fridge for the next morning to dry out the skin. That will make the skin extra crispy. I made two pans of this the other day for four folks (including myself), and the only thing left was a bit of chicken… enough for a nice sandwich the next day. So, you ready… let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1/2 large chicken
- THE MARINADE
- 1 quart water, filtered variety
- 1/4 cup tamari sauce or liquid aminos
- 1 tablespoon coconut sugar or brown sugar
- 2 teaspoons salt, Kosher variety, fine grind
- THE VEGGIES
- 1 pound carrots, potatoes, broccoli, onions, etc.

Step 2The Chicken You can purchase a split chicken, but it is cheaper to get a whole chicken and cut it in half. Take the other half and freeze it for another dinner, later on.

Step 3Gather your Ingredients (mise en place).

Step 4Add all the marinade ingredients together and make sure they are completely dissolved. Add the chicken, cover, and put it into the fridge overnight. The next morning, remove the chicken from the marinade (discard the marinade), pat dry, and place on a plate or baking sheet, uncovered, for the morning, and until you are ready to cook. This will help crisp the skin during baking.

Step 5Place a rack in the middle position and preheat the oven to 400 degrees F (205 C).

Step 6Season the chicken with oil, salt, and pepper, and place on a parchment-lined baking sheet. Cut up your veggies. Toss with a bit of oil, salt, and pepper, then place around the chicken.

Step 7Place in the preheated oven.

Step 8Bake until the skin is crispy, and the internal temp of the thighs reaches 165F/74C, between 45 and 60 minutes.
