Ingredients For sesame chicken with cauliflower rice

  • FOR THE CHICKEN
  • 1 1/2 lb
    boneless chicken thighs cut into bite size pieces

    eggs beaten
  • 1/2 c
    flour
  • 1/2 c
    cornstarch
  • salt and pepper
  • peanut oil for frying
  • FOR THE SAUCE
  • 2 clove
    garlic minced
  • 1 tsp
    olive oil
  • 1/4 c
    honey
  • 1/3 c
    soy sauce
  • 1/2 c
    ketchup
  • 4 Tbsp
    dark brown sugar
  • 2 Tbsp
    rice vinegar
  • 1 tsp
    toasted sesame oil
  • 2 tsp
    cornstarch
  • 1 Tbsp
    black and white sesame seeds
  • FOR THE CAULIFLOWER RICE
  • 1/2
    head cauliflower shredded in a food processor.
  • 2 tsp
    olive oil
  • salt

How To Make sesame chicken with cauliflower rice

    For the Chicken Place the eggs salt, and pepper in a shallow dish mix well.

    Place the flour and cornstarch in a shallow dish and mix. Dip each piece of chicken in the egg mixture then dredge in the flour mixture. Place in a single layer on a baking pan. Set in the fridge for 1 hour.

    Heat the peanut oil to 350 degrees. Working in small batches cook the chicken about 5 minutes in the hot oil. Remove with slotted spoon and place on paper towel lined plate to drain. Repeat until all chicken is done.

    For the Sauce. Mix the honey, soy, ketchup, dark brown sugar, rice vinegar, sesame oil and cornstarch in a bowl. Mix well. Place the oil in a saucepan. Add the garlic and cook 30 seconds. Add the honey mixture and cook 3 to 4 minutes until hot and thickened. Mix the chicken into the sauce. Sprinkle with sesame seeds..

    For the Cauliflower rice Place the oil in a large skillet. Add the cauliflower rice and salt and cook for 2 or 3 minutes just until hot.
