This is inspired by another recipe from a recipe book put out by Costco®. I'm trying to cut down on carbs and this seemed like a yummy way to do so!

Ingredients For sesame chicken and melon

  • 2 Tbsp
    vegetable or peanut oil
  • 4
    chicken breasts, boneless and skinless, cut into chunks
  • 1 Tbsp
    soy sauce
  • 2 Tbsp
  • 6 clove
    garlic, thinly sliced
  • 1 Tbsp
    ginger, minced fresh
  • 2 bunch
    green onions, chopped
  • 1/2 c
    toasted sesame seeds
  • 4 c
    cantaloupe, diced

How To Make sesame chicken and melon

    Heat oil in wok over high heat. Add chicken and stir-fry until they begin to get brown.

    Reduce heat to medium. Add soy sauce, mirin, garlic and ginger. Stir-fry until most of liquid is gone.

    Add green onions and sesame seeds. Sauté until chicken is done.

    Arrange melon on 4-6 plates and top with chicken.
