sesame chicken and melon
This is inspired by another recipe from a recipe book put out by Costco®. I'm trying to cut down on carbs and this seemed like a yummy way to do so!

Ingredients
- 2 tablespoons vegetable or peanut oil
- 4 - chicken breasts, boneless and skinless, cut into chunks
- 1 tablespoon soy sauce
- 2 tablespoons mirin
- 6 cloves garlic, thinly sliced
- 1 tablespoon ginger, minced fresh
- 2 bunches green onions, chopped
- 1/2 cup toasted sesame seeds
- 4 cups cantaloupe, diced
How To Make sesame chicken and melon

Step 1Heat oil in wok over high heat. Add chicken and stir-fry until they begin to get brown.

Step 2Reduce heat to medium. Add soy sauce, mirin, garlic and ginger. Stir-fry until most of liquid is gone.

Step 3Add green onions and sesame seeds. Sauté until chicken is done.

Step 4Arrange melon on 4-6 plates and top with chicken.
